Serves 1

  • 6 mini chicken break fillets (cut into chunks)
  • 1/2 red pepper (cut into chunks)
  • Olive oil
  • 1 tbs jerk seasoning
  • 3 spring onions (chopped)
  • Juice from 1 lime x2
  • 4 slices of mango (cut into chunks)
Equipment :

Knife Bowl x2 Spoon Skewers x2 Baking tray

  1. Preheat the oven to 220 C/Gas Mark 7
  2. Add spring onions, pepper and mango to bowl - mix
  3. Pour the juice of a whole lime to the bowl and mix everything together
  4. Pour your jerk seasoning, 1 tbsp of olive oil and the juice from a whole lime into another bowl and mix together to make a marinade
  5. Add chicken to jerk seasoning marinate bowl and stir to coat well
  6. Thread your chicken pieces on to your skewers (there should be about six on each skewer) and add to a baking tray
  7. Place your chicken skewers into the oven for 10 mins at 220 C/Gas Mark 7
  8. Serve your chicken skewers with your mango salad and enjoy!
