Serves 1/Makes 2 pittas

  • 8x chicken mini fillets
  • 1/2 red onion (sliced)
  • 1/4 cucumber (sliced)
  • 1/2 avocado (sliced)
  • Handful of mixed salad
  • 2 x tomatoes (sliced)
  • 1 tsp Olive oil
  • 2tbs sour cream
  • 2 x wholemeal pitta (toasted)
  • 1 tbs fajita seasoning
Equipment :
  • Pan
  • Knife
  1. Add olive oil to a bowl with your fajita seasoning and mix together
  2. Add your chicken to the bowl and mix around until all pieces of chicken are coating in the marinade
  3. Add olive oil to a pan and let it heat before adding your chicken
  4. Let the chicken cook for about 5 minutes on one side before turning it over to cook the other
  5. Build your pitta pocket by layering all of the ingredients followed by a blob of sour cream over the top
  6. Enjoy!
